Joni's Chicken Parmesan

Mixture:  3/4 to 1 cup Parmesan cheese (grated)
                 3/4 cup Italian bread crumbs
                 1/4 cup plain bread crumbs

Flatten chicken breasts, dip in beaten egg, place in mixture and pat down both sides. Brown in oil (olive).   Put sauce in bottom of pan, put browned chicken in, cover lightly with *sauce. Bake 350* for 30 minutes or until chicken is done. Put slices of Mozzarella cheese on top, let melt & serve!


*Marinara Sauce
12 cups tomatoes (peeled and processed in blender)
2/3 cup fresh onion
3 small cans tomato paste
1 Tbls. Crushed powdered oregano
1 Tbls. Basil
3 Tbls. Garlic powder
2 Tbls. Salt
1 tsp. Red pepper flakes
1/2 cup olive oil

Bring to boil, then simmer for 1 hour. 3 quarts or seven pints. Cold pack for 20 minutes
