Sherry's Mandarin Orange Salad

My grandkids favorite!!

INGREDIENTS
1 pkg vanilla pudding, (cook and serve)
1 pkg orange jello
1 pkg tapioca pudding
3 C cold water
1 (8 oz) Cool Whip
4 - 5 small cans mandarin oranges, drained
 
DIRECTIONS
Place puddings, Jello and water in a pan.  Bring to a boil.  Cool.  Add drained fruit and Cool Whip.  Mix well and refrigerate.

Sherry's Macaroni Salad

14 - 16 oz shell macaroni, cooked and rinsed
1/2 C oil
1/4 C sugar
Grated onion
1/2 C ketchup
1/4 C vinegar

Pour over cooked macaroni and leave overnight in refrigerator (mix it up once in awhile)

Add:

1 C chopped celery
1 can or 1 pkg shrimp (nowadays they are frozen in freezer section of store)
1 C raw cauliflower, chopped

Moisten with mayonnaise.

Sherry's White Corn Salsa

INGREDIENTS
2 cans white shoe peg corn
8 - 10 Roma tomatoes (diced)
5 green onions, chopped
2 limes, juiced
1 - 2 cloves garlic, chopped
1 can chopped olives
Garlic salt to taste
1/2 bottle Zesty Free Italian salad dressing

DIRECTIONS
Mix: all together - refrigerate.  Serve with chips.

(You can add more ingredients as you like)

Kathryn's Carmel Apple Dip

INGREDIENTS
16 individually wrapped caramels, unwrapped
1/4 cup water
1 (8 oz) package cream cheese
1/2 cup brown sugar

DIRECTIONS
In a medium saucepan over medium-low heat, or in the microwave, melt caramels with water, stirring frequently. Remove from heat. In a medium bowl, cream together cream cheese and sugar. Fold in caramel mixture. Serve immediately.

Merilee's Cranberry Spread

INGREDIENTS
1  8 oz. pkg. cream cheese
2 Tbsp. orange juice concentrate
1/8 tsp. cinnamon
1 Tbsp. sugar
zest of 1 orange
1/4 cup finely chopped pecans
1/4 cup finely chopped dried cranberries
 
DIRECTIONS
Combine first 4 ingredients.  Mix well with an electric mixer. 
 Fold in remaining ingredients.  Refrigerate.  Serve with crackers.

Merilee's Swedish Meatballs

INGREDIENTS
1  12 oz. bottle chili sauce
1  18 ox. jar grape jelly
1 lb. meatballs
 
DIRECTIONS
Mix chili sauce and jelly together in a crock pot.  Add meatballs and cook on low for 4-5 hours. 
Serve over rice and noodles.

Mona's Ranch Cheese Ball

INGREDIENTS
1 (8oz) pkg cream cheese at room temp
2c grated cheese (your choice)
2 heaping T mayo
pkg Ranch dressing mix

DIRECTIONS
With cream cheese softened add grated cheese, mayo and mix. Add Ranch dressing to taste. Roll into ball and garnish with parsley and/or almond slices. Serve with crackers.

Annie's Fruit Salsa and Cinnamon Chips

INGREDIENTS
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 oz raspberries
1 lb strawberries
2 T white sugar
1 T brown sugar
3 T fruit preserves, any flavor
10 (10 inch) flour tortillas
butter flavored cooking spray
2 tablespoons cinnamon sugar

DIRECTIONS
In a large bowl, thoroughly mix fruits with sugars and preserves. Cover and chill at least 15 minutes. Preheat oven to 350°. Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool. Serve with chilled fruit mixture. Note: You can use any kind of fruit and any flavor of preserves. Plums and blueberries work well with grape jelly.

Starla's Spicy Sausage Wonton Stars

INGREDIENTS  
1 pound bulk spicy pork sausage 
2 medium carrots, finely shredded 
1 medium onion, finely chopped 
1/2 cup finely chopped sweet red pepper 
1/2 cup finely chopped green pepper 
1 cup (4 ounces) finely shredded pepper jack cheese 
1/2 cup sour cream 
2 garlic cloves, minced 
1 teaspoon lemon-pepper seasoning 
36 wonton wrappers 
1 tablespoon butter, melted 
1/8 teaspoon garlic powder 
Sliced cherry tomatoes, optional
 
DIRECTIONS 
In a large skillet, cook sausage over medium heat until no longer pink; drain. In a large bowl, combine the sausage, carrots, onion, peppers, cheese, sour cream, garlic and lemon-pepper.  
Press wonton wrappers into miniature muffin cups coated with cooking spray. In a small bowl, combine butter and garlic powder; brush over edges. Bake at 350° for 8-9 minutes or until lightly browned.  
Spoon sausage mixture into cups. Bake 5-7 minutes longer or until heated through. Garnish with tomatoes if desired. Yield: 3 dozen.

Starla's Chocolate Chip Cheese Ball

INGREDIENTS
1 package (8 ounces) cream cheese, softened  
1/2 cup butter, softened  
1/4 teaspoon vanilla extract
3/4 cup confectioners' sugar
2 tablespoons brown sugar  
3/4 cup miniature semisweet chocolate chips  
3/4 cup finely chopped pecans 
Graham crackers

DIRECTIONS In a large bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually add sugars; beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours. Place cream cheese mixture on a large piece of plastic wrap; shape into a ball. Refrigerate for at least 1 hour. Just before serving, roll cheese ball in pecans. Serve with graham crackers. Yield: 1 cheese ball (about 2 cups).

Sue's Tortilla Wraps appetizer

INGREDIENTS
1pkg softened cream cheese
1/4c salsa (mild, medium or hot)
1/3c walnuts, chopped
1T chives, chopped fine
cilantro - optional
Tortillas (about 3 8" tortillas)

DIRECTIONS
Blend ingredients together; spread on flour tortillas of your choice.  Roll up and cut into 1/4" slices. Serve.

Rachel's Fruit Dip

INGREDIENTS
assortment of fresh fruit, cut
1pkg cream cheese
1 container or marshmallow cream
vanilla extract (a few drips)

DIRECTIONS
cut up all fruit. Mix cream cheese, marshmallow and vanilla with beaters. Dip fruit and enjoy!

Rachel's Bacon-wrapped Smokies

INGREDIENTS
1 lb. bacon
1pkg (16oz) lil' smokies sausages
1c brown sugar (or to taste)

DIRECTIONS
Preheat oven to 350°. Cut bacon into thirds; wrap each smokie with bacon. Skewer onto wooden skewers, about 5 or 6 on each.
Place on cookie sheet, then rub brown sugar on each one. Bake until bacon is crisp and brown sugar is melted.

Lowe's Favorite Appetizer

mushrooms
1pkg cream cheese
1 lb. Jimmy Dean maple pork sausage

Clean mushrooms, remove stems. Brown sausage and mix with cream cheese. Stuff mushrooms. Bake at 350°.

Salad Dressing

INGREDIENTS
1 onion, finely chopped
2/3 cup white sugar
1 teaspoon salt
1 cup vegetable oil
1/3 cup cider vinegar
1 teaspoon celery seed
1 tablespoon prepared Dijon-style mustard

DIRECTIONS
pour ingredients into a jar or bottle. shake it up to combine. place it in the fridge or pour it over your salad.
be sure to refrigerate any leftovers until you want to use it again. 
although this recipe calls for this much sugar and oil, i add a little less sugar and about half as much oil. because i love it that way.
oh, and no onion for me, but i bet it'd be good.

i have used this dressing over a bacon/egg/crouton/mushroom/spinach salad, a spinach/cranberry/feta/almonds salad, and just plain romaine. it has been great on each.

Merilee's Cranberry Spread

INGREDIENTS
1 8oz. cream cheese
2 Tbsp. orange juice concentrate, thawed
1/8 tsp. cinnamon
1 Tbsp sugar
zest of 1 orange (optional)
1/4 cup finely chopped pecans
1/4 cup finely chopped dried cranberries

DIRECTIONS
Combine first 4 ingredients and mix well with an electric mixer. Fold in remaining ingredients. Refrigerate. Serve with crackers.

Merilee's BLT Dip

INGREDIENTS
1/2 cup sour cream
1/2 cup mayonnaise
1/2 lb. bacon, cooked and crumbled (or bottled bacon bits to taste)
1 tomato, diced

DIRECTIONS
Mix all ingredients together and chill for 2 hours.

Amber's 7 Layer Dip

INGREDIENTS
One or two cans of refried beans
One large container of sour cream (16 oz)
One package of taco seasoning
Shredded cheddar and Monterey Jack cheeses
Chopped tomatoes
One can of olives, chopped
4-5 green onions, chopped
3-4 Cups of guacamole
1/2 C salsa

DIRECTIONS
1) In a bowl mix together the refried beans, half the taco seasoning, the salsa, and a couple tablespoons of sour cream. Spread the mixture into a large casserole dish (9X13)

2) In a separate bowl mix the sour cream with the remaining taco seasoning. Spread the sour cream mixture on top of the refried beans mixture.

3) Carefully spread the guacamole on top of the sour cream mixture. Take care not to mix the two together.

4) Toss the two types of grated cheese together, then spread them on top of the guacamole. Sprinkle with the olives, tomatoes, and green onions.

Chill for a couple of hours and then enjoy! Sneakily, if you must.

Carolyn's Shrimp Platter Appetizer

INGREDIENTS
1 8oz. package cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
2 cans (4.5 oz each) broken shrimp, drained and rinsed
1 cup seafood cocktail sauce
2 cups shredded mozzarella cheese
1 green pepper, chopped
3 green onions, chopped
1 large tomato, diced

DIRECTIONS
Combine cream cheese, sour cream, and mayonnaise. Spread on a 12" glass plate. Scatter shrimp over the cheese layer. Cover with cocktail sauce. Add a layer of shredded mozzarella cheese, a layer of green peppers, and a layer of green onions. Arrange diced tomato in the center. Cover with plastic wrap and chill. Serve with assorted crackers.

Patrice's Marshmallow Fruit Dip

INGREDIENTS
1 jar marshmallow crème
1- 8oz pkg cream cheese
2-3 Tbls. strawberry jam
3 cups powdered sugar

DIRECTIONS
Beat all ingredients together. Add more powdered sugar to get desired consistency.
