1/2-1 Tbsp. canola oil
1/2 onion, diced
2 cloves, minced
4 cups tomatoes, peeled and slightly chopped
2 14oz. cans vegetable or chicken broth
3 Tbsp. fresh basil, chopped (or 1 Tbsp. dried)
Salt and Pepper to taste
DIRECTIONS
In a saucepan, saute onions in oil for 4-5 minutes. Avoid browning. Add garlic and mix together. Add tomatoes and broth. Bring to a boil and simmer 15-20 minutes or until tomatoes are soft.Remove from heat. Add basil and blend until smooth. Season with salt and pepper.
