April's Spinach Tortellini Soup

INGREDIENTS
1/2 c. chopped carrots
1/2 c. chopped onion
1 tsp. olive oil
2 garlic cloves pressed
1 tsp. of Italian seasoning
4 cans of chicken broth
9 oz. of cheese tortellini
1 can great northern beans drained
1/4 tsp. black pepper
3 cups of fresh spinach

DIRECTIONS
Cook onion, garlic, carrots and Italian seasoning in oil for 2-3 minutes. Add broth and bring to boil. Stir in everything else (except spinach) and boil gently 7-9 minutes. Remove from heat and stir in spinach. Cover for 3 minutes and then serve immediately.
