INGREDIENTS
1 onion - chopped
2 Tbsp. butter
3 cups chicken broth
4 cups zucchini-peeled if tough-sliced
1/8 tsp. pepper
1/8 tsp. salt
1/8 tsp. nutmeg
1/2 cup half & half
pinch cayenne
grated cheese
DIRECTIONS
Cook onion in butter until clear. Add zucchini and chicken broth. Bring to a boil and simmer until tender.
Add
seasoning. Take out approx. 4-6 cups at a time and process in blender
until smooth. Add half and half. Top with grated cheese.
