Shanda's Clam Chowder

INGREDIENTS
2 cans minced clams             (save the juice to pour into the pot over veggies)
2 cans chopped clams           (save the juice to pour into the pot over veggies) 1 (8oz) bottle clam juice
1 cup onion chopped fine
6 ribs celery chopped fine
4 cups red potatoes chopped fine
3/4 cup butter
3/4 cup flour
1 pint half and half cream
1 pint skim milk
1/2 tsp salt
dash pepper
1/2 tsp sugar
3 1/2 Tbsp red wine vinegar


DIRECTIONS
Pour juice from cans and jar over vegetables. Add enough water to barely cover veggies, and simmer over medium heat until potatoes are tender, about 20 minutes.  In another pan, melt butter; add flour and cook for 1 minute.  Add cream and milk, then cook and stir until quite thick using a whisk to blend. (This is what I call a roux, although it's not technically that)  Add clams to undrained, cooked veggies, then add "roux" to clams/veggies. Heat through. Season with salt, sugar, pepper and RW vinegar. Serve. ENJOY!!!


This is how I like clam chowder. It's a little tangy, but really good! To measure the skim milk I empty the half&half into the pot, then fill the half&half container with milk, then add the milk to the pot. If you want to measure out that pint of skim milk, go ahead. Either way works.

Shanda's Ginger Molasses Cookies


 Soft Molasses Cookies
INGREDIENTS
1 cup packed brown sugar
3/4 cup butter, softened (or shortening)
1/4 cup molasses
1 egg, beaten
2 1/2 cups flour
1 1/2t baking soda
1t ground cinnamon
1t ground ginger
1/2t ground cloves
1/4t salt
3T granulated sugar

DIRECTIONS
Heat oven to 325°. Beat brown sugar and butter in a large bowl until creamy. Beat in molasses and egg. Stir in remaining ingredients, except granulated sugar.
Shape dough by rounded teaspoons into balls. Roll balls in granulated sugar. Place dough balls about 2 inches apart onto parchment-lined cookie sheet.
Bake 6-8 minutes, or until just set and cookies appear dry. Immediately remove from cookie sheet to wire rack. (This is how you get a cookie that is soft in the middle, and "crunchy" on the outside)

You can also shape them with a Tablespoon, and bake them for 13-15 minutes.

note: If you are baking these at an elevations lower than 3500ft, change the flour to 2 1/4 cups and the baking soda to 2t.

Terri's Spoon Cornbread

INGREDIENTS
2 eggs, slightly beaten
1 8 ½ oz pkg corn muffin mix
1 8 oz can whole kernel corn, drained
1- 8 oz can cream-style corn
1 C sour cream
½ C margarine, melted

DIRECTIONS
Combine eggs, muffin mix & corn in bowl; mix well. Stir in sour cream & margarine. Spoon into 8x 11-in baking dish. Bake at 350 degrees for 45 minutes or until bread tests done.

Terri's Crusty Brown Bread

INGREDIENTS
4 C whole wheat flour
1 ½ C all-purpose flour
4 t baking soda
2 C packed brown sugar
2 t salt
4 C buttermilk

DIRECTIONS
Combine whole wheat flour, all-purpose flour, soda, brown sugar & salt in bowl. Add buttermilk, mix just until smooth. Pour batter into 2 greased & floured 5 x 9- in loaf pans. Bake at 350 degrees for 1 hour or until loaves test done.

Terri's English Muffins in a Loaf

INGREDIENTS
5 ½ - 6 cups flour
2 T yeast
1 T sugar
2 t salt
¼ t baking soda
2 C milk
½ C water
Cornmeal

DIRECTIONS
Combine 3 C flour, yeast, sugar, salt & soda. Heat liquids until very warm. Add to dry mixture; beat well. Stir in enough more flour to make a stiff batter.
Spoon into two 8 ½ X 4 ½- in pans that have been greased & sprinkled with cornmeal. Sprinkle tops with cornmeal. Cover; let rise in warm place for 45 min.
Bake at 400 degrees for 25 min Remove from pans immediately and cool. Makes the best toast ever!

Terri's Parmesan Pull-Aparts

INGREDIENTS
2 cans refrigerated homestyle biscuits
3 T butter, melted
1 t garlic powder
½ t dried parsley
1 t dried minced onion
1 T grated parmesan cheese
1/3 C shredded Mozz cheese

DIRECTIONS
Preheat oven to 425 degrees. In a small bowl mix together the melted butter, garlic powder, dried parsley, minced onion & parmesan cheese. Spread mixture in the bottom of a 9- in glass pie plate. Sprinkle the shredded mozzarella cheese evenly over the top of the butter mixture.
Remove biscuits from cans. Place biscuits close together over the top of the cheese & butter mixture. You might not need all the biscuits.
Bake biscuits in the oven for 12 minutes or until golden brown. Remove and let stand 3 minutes. Turn biscuits upside down onto a serving plate. Serve warm!

INGREDIENTS
1 6 oz can frozen orange juice
1 C water
1 C milk
¼ C sugar
½ t vanilla
6 ice cubes

DIRECTIONS
Mix ingredients in blender.
(Can substitute orange juice for frozen strawberries)

Terri's Banana Slush

INGREDIENTS
6 C water
3 C sugar
3 small cans frozen orange juice
2 small cans frozen lemonade
5 – 6 banana’s, mashed
1 qt pineapple juice

DIRECTIONS
Cook water & sugar. Boil 5 minutes. Add all ingredients in large bowl & freeze. Set out before serving about an hour. Stir before putting in cups. Pour 7-up into mixture in cups.

Terri's Delicious Punch

1 packet unsweetened kool-aid (any flavor)
1 (2 liter) bottle ginger ale
1 (64 oz) bottle white grape juice
1 C sugar
8 scoops pineapple sherbet

Chill ginger ale and grape juice overnight. Remove sherbet from freezer about ½ hour before serving punch to soften. In a large bowl, combine kool-aid, sugar & chilled juice. Stir to blend. Slowly add chilled ginger ale. Float 8 scoops of softened sherbet on top.

Terri's Hootenany's

Mix in blender:
6 or 7 eggs
1 C flour
½ t butter or margarine
1 C milk
1 t vanilla

DIRECTIONS
Melt cube of margarine or butter in cake pan in oven. Pour blender mix into melted butter.
Bake at 425 degrees for 25 minutes. (Make sure you take a peek in the oven as it bakes!)
Serve with warm applesauce & cinnamon or warm syrup.

Clara Lee's Waffles

INGREDIENTS
3 eggs – separated
1 ¾ C flour
2 t baking powder
½ t salt
1 ½ C sour milk
1 t soda
½ C oil

DIRECTIONS
Beat egg whites and set aside. Mix rest of ingredients with an electric hand mixer. Add egg whites and mix with a wooden spoon. Pour onto hot waffle iron and enjoy!

Kaye's Baked Zeti

INGREDIENTS
1 lb cooked zeti pasta
30 oz marinara sauce
½ lb cooked hamburger
½ lb cooked sausage
¾ lb shredded mozzarella cheese
1 lb ricotta cheese
¼ C fresh basil, finely chopped
1/3 C + 2 T grated parmesan cheese
1 large egg
½ t pepper

DIRECTIONS
Preheat oven to 350 degrees.
In large bowl combine cooked, pasta, 3 C marinara sauce, cooked meats, & all but ½ C of the shredded mozzarella cheese.
In medium bowl combine ricotta cheese, basil, 1/3 C parmesan cheese, egg, & pepper.
Spoon half of the pasta mixture into 13 X 9- in baking dish. Top with ricotta mixture spreading to an even layer. Top with remaining sauce & cheese.
Bake 25 minutes or until hot & bubbling around edges of dish. Makes 12 servings.

Terri's Mini Apple Pies

Cut up apples in bite size pieces to make 8 cups

Mix apples with:
12 T flour
4 heaping t cinnamon
¼ - ½ t nutmeg

You will also need 4 T chilled butter cut into 24 equal portions, 2 boxes of Pillsbury pie crusts.
Use wide mouth mason lid to cut circles. Put in muffin tins. Add apple mixture and put a dab of butter on each mini. Cover with left over crust. Brush w/melted butter. Bake at 400 degrees for 18-22 minutes.

Terri's Doubletree Chocolate Chip Cookies

INGREDIENTS
½ C rolled oats
2 ¼ C all-purpose flour
1 1.2 t baking soda
1 t salt
¼ t cinnamon
1 C (2 sticks) butter, softened
¼ C brown sugar, packed
¾ C granulated sugar
1 ½ t vanilla
½ t lemon juice
2 eggs
3 C semi-sweet choc chips
1 ½ C chopped walnuts

DIRECTIONS
Preheat oven to 350
Grind oats in a food processor or blender until fine. Combine the ground oats with the flour, baking soda, salt, and cinnamon in a medium bowl.
Cream together the butter, sugars, vanilla, and lemon juice in another medium bowl with an electric mixer. Add the eggs and mix until smooth.
Stir the dry mixture into the wet mixture and blend well. Add the choc chips and nuts to the dough and mix by hand until well incorporated.
Spoon rounded ¼ C portions onto an ungreased cookie sheet. Place the scoops about 2 in apart. Bake for 16 to 18 min or until light brown & soft in middle.
Store in a sealed container when cool to keep soft.

On a plate pile:
Cooked rice
Chow mein noodles
Chopped cooked chicken


Other toppings:
Celery
Tomatoes
Grated cheese
Green onions, chopped
Crushed pineapple
Coconut

Pour gravy over Sundae.
Gravy: can of cream of chicken soup, Dilute with water.

Terri's CrockPot Chicken

1 pkg dry Italian dressing
¼ C water
½ C melted butter

Pour over 3 or 4 chicken breasts in crock pot. Add 2 C mushrooms, 1 can cream of chicken soup, & 8 oz cream cheese.
Cook 5 to 6 hours on low.
Shred chicken and serve over noodles or rice.

Terri's Slow Cooked Meat and Salsa

One jar salsa of your choice
Lean meat: chicken, beef, or pork

Pour some salsa in bottom of crock pot. Add meat and pour more salsa on top. Cook on low until meat is falling apart. Shred meat and add salsa until all is moist.
This can be served on buns, in tortillas, over rice, or all by itself.

Ginny's Don't Know Casserole

INGREDIENTS
1 lb hamburger
1 pkg ronzoni pasta, cook 10 minutes
1 bottle Prego spaghetti sauce

DIRECTIONS
Brown hamburger. Mix Prego & hamburger together. Stir into cooked noodles. Add mozzarella cheese. Put into baking dish and add more cheese on top. Bake until warmed through.

Terri's Cheesy Chicken & Rice Casserole

INGREDIENTS
1 can cream of chicken soup
1 1/3 C water
¾ C uncooked long-grain rice
2 C frozen mixed vegetables
½ t onion powder
4 skinless, boneless chicken breasts
½ C shredded cheese

DIRECTIONS
Stir the soup, water, rice, vegetables, onion powder in a 9 x 13 shallow baking dish. Top with chicken. Season chicken with desired seasonings. Cover.
Bake at 375 degrees for 45 min or until done. Top with cheese. Makes 4-6 servings.

Buttermilk Syrup – Heidi Hall

1 cube butter
1 cup sugar
½ cup buttermilk (can also use milk w/ a few drops of vinegar drizzled in- let set for a minute)

Bring to a boil in a large sauce pan stirring often – remove from heat and add 1 tsp. vanilla and ½ tsp. baking soda and stir – it will get really foamy – it’s great!

Blond Brownies (we call them Beigies) Vickie Cardon

Preheat oven to 350 and grease a jelly roll pan

Sift and set aside-
3 3/8 cups of flour
3 ¾ tsp. baking powder
1 tsp. salt

Cream well–
2 5/8 cups brown sugar
2 ¼ sticks butter
2 tsp. vanilla
5 eggs

Then blend in flour mixture – add chips and/or nuts to taste
Bake for 20 to 25 minutes

Mom’s Yam Delight – Laurie Maynes

6 medium yams
5 golden delicious apples

Boil yams until partially done, cool, peel, and cut into chunks
Core and cut apples into chunks
Layer yams and apples into baking dish

Sauce-
1 cup sugar
2 cups water
3 Tbs. corn starch                Cook until thickened
1 tsp. salt
1 cube butter
Juice of ½ lemon

Bake at 350 for 1 hour.   A triple recipe will make a large, deep 9 x13 pan but only double the sauce

Japanese Chicken - Ashley Cardon Rahlf

Dip chicken chunks or tenders in egg and toss w/ flour
Fry in oil until crisp and brown and place in glass baking dish

Sauce-
1 cup sugar
½ cup vinegar
3 tsp. soy sauce
3 tsp. water

Pour ½ sauce over chicken and bake for 20 minutes @ 350 – turn chicken over and cover w/ remaining sauce- cook 25 more minutes

Debbie's Quick Apple Dumplings

(Great fun to make with the kids!)
INGREDIENTS
2 tart apples (granny smiths are good)
1 (8 – count) pkg. refrigerated crescent roll dough
1/8 tsp. Ground cinnamon
½ cup butter
1 cup sugar
1 cup orange juice
1 tsp. vanilla
½ cup chopped pecans or walnuts

DIRECTIONS
Preheat oven to 350F. Grease 8 square in. pan.
Peel and core and quarter apples
Unroll and separate dough
Wrap each apple section in a crescent roll-place in pan-sprinkle with cinnamon
Combine butter, sugar, and OJ in pan & bring to boil – remove from heat
Stir in vanilla and pour over dumplings-sprinkle with nuts
Bake 30 minutes or until crust is browning and apples are just tender when pierced w/ fork
To serve, spoon some of the syrup over dumplings
Great with vanilla ice cream or a large dollop of whipped cream

Beverly's Sour Cream Enchiladas

INGREDIENTS
1 doz thick corn tortillas
1 pint sour cream
1 sm can diced green chilies
1 clump green onions, chopped
1 can cream of chicken soup
2 ½ c mild cheddar cheese, grated
1 can olives, sliced for garnish

DIRECTIONS
Fry tortillas in oil just barely. Put napkins between them to soak up the grease.
Put sour cream green chili’s, green onions, and soup in a sauce pan. Warm on med heat-do not overheat. Take off of burner. Spoon lg tablespoon of mixture onto a tortilla shell. Sprinkle on some cheese, then roll tortilla. Lay on cookie sheet that has a thin layer of sour cream mixture spread on the bottom of the cookie sheet. After all tortillas are filled, spread rest of sour cream mixture on top. Sprinkle grated cheese over mixture.
Garnish with sliced olives, if desired. Bake @ 350 for 15 minutes.

Beverly's Favorite Cornbread

INGREDIENTS
2 C yellow corn meal
2 C flour
½ C white sugar
2 T baking powder
2 t salt
2 C milk
1 C Crisco shortening
2 eggs slightly beaten

DIRECTIONS
Put all dry ingredients and shortening in bowl. Work til cornmeal is the size of tiny peas
Add milk and beaten eggs. Stir til all dry ingredients are wet. Do not ovestir. Pour into well-
buttered 9 x 13 pan and bake. 375 for 20-25 minutes

Beverly's Sweetheart Cake and White Icing

SWEETHEART CAKE
1 C shortening
1 ½ C white sugar
1 t vanilla
4 eggs
3 C flour
½ t salt
1 1/3 C milk
4 t baking powder

Cream shortening, sugar, and vanilla. Beat til smooth and creamy. Add eggs, beat. Then add dry ingredients and milk. This will make a 2 or 3 layer cake or 1 regular oblong cake. Bake at 375 for 30-35 minutes.

WHITE ICING
3 ½ t flour
½ C regular milk

Make a paste and cool.
Then add ½ C white sugar and ½ C shortening, cream altogether.
Add pinch of salt, 1 t vanilla, and 2 to 3 C powdered sugar.
Thin with evaporated milk if necessary.
(Use coconut, pineapple or whatever to make variations.)

Beverly's Mincemeat Bars

INGREDIENTS
27 oz none-such mincemeat
20 oz can crushed pineapple
1 T cornstarch
½ C sugar
1 t cinnamon
¼ t cloves

Cook over low heat until bubbling. Cool

2 C all-purpose flour
2 C quick-cooking rolled oats
1 1/3 C packed brown sugar
½ t baking soda
1 C softened butter or margarine
1 t cinnamon

Use pastry cutter to cut ingredients together. When mixture resembles coarse crumbs, you are done. (it will be dry) Save 1 cup of crumbs. Press the rest into bottom of pan. Spread 2/3 fruit mixture over crumbs. Use crumbs saved to sprinkle on top.

Bake 350 for 30-35 minutes. Cut into bars when cooled.

Beverly's Soft Sour Cream Sugar Cookies


INGREDIENTS
1 C margarine                                             
2 t baking soda
2 C sugar                                                      
1 C sour cream
2 eggs                                                       
2 t baking powder
2 t vanilla                                                      
½ t nutmeg
1 t lemon flavoring                                              
5-6 C flour
1 t salt

DIRECTIONS
Cream margarine and sugar.  Add eggs and beat until fluffy.  Add baking soda to sour cream.  Stir well. (Rises to make almost 2 cups)  Add flavorings to creamed mixture.  Stir in dry ingredients.  Alternate with sour cream mixture.  Add enough flour to make dough for rolling, so it doesn’t stick to rolling pin.
Roll and cut ¼ inches thick.  Bake at 375 for 8 minutes.  Makes 5-6 dozen.
Don’t overbake.

C.J. Sweet & Sour Chicken

In med skillet, melt ¼ c butter or margarine. Add, stirring constantly, ¼ c chopped onion, ¼ c chopped green pepper, & ½ c diced carrots. Add & stir in: ¾ c ketchup, 1 c pineapple juice, 3 T vinegar, ¼ c brown sugar, 2t soy sauce, ½ t garlic salt, ½ t salt, ¼ t pepper, & dash of ginger. Cook, stirring constantly until boiling. Add: 1 c pineapple chunks. Pour over skinless chicken breasts. Cut into pieces. Bake at 350-375, covered for 45 minutes, 30 minutes uncovered or until chicken is done. Serve with rice. (I have also cooked it in a slow cooker with smaller chunks of chicken) It is good either way. You change the veggies or add more!
